When we were in Cairo, we went to a famous koshari restaurant called Abu Tarek. Koshari is a popular, inexpensive Egyptian vegetarian dish made of rice, pasta, lentils and chickpeas topped with zesty tomato sauce, caramelised onions and doqqa… a crumbly spicy mix. While walking toward Piccadilly’s Circus, we spotted the Koshari Street restaurant, and stopped in for a take away.
The dish comes in layers. The first layer is the lentils, pasta (which is any kind of pasta like macaroni, spaghetti, etc.), rice mixture, topped with the warm tomato sauce.
The next layer are the spices, vinegar, chickepeas, and fried onions. Mix it up later and you get an inexpensive, delicious Egyptian comfort food meal.
